- ABSTRAK Penelitian berjudul “Kajian Jumlah Bakteri, Kadar Asam Laktat dan Daya Tahan Susu Kambing Sapera di Cilacap dan Bogor” dilaksanakan pada 9 April sampai 21 Juni 2013. Materi yang digunakan dalam penelitian ini adalah masing-masing 15 ekor kambing Sapera di Cilacap dan Bogor, sampel susu sebanyak 150ml diambil dari setiap ekor kambing. Metode penelitian adalah survey dengan metode pengambilan sampel secara accident sampling. Data jumlah bakteri dan kadar asam laktat susu dianalisis menggunakan uji t, sedangkan data daya tahan susu dianalisis menggunakan uji tanda Mc Siegel. Hasil penelitian menunjukan bahwa jumlah bakteri di Cilacap dan Bogor berbeda nyata ( thit > ttabel ), sedangkan kadar asam laktat dan daya tahan susu tidak berbeda nyata. Kesimpulan dari penelitian ini adalah perbedaan tempat mempengaruhi jumlah bakteri susu, namun tidak mempengaruhi kadar asam laktat dan daya tahan susu kambing Sapera Kata Kunci : Kambing Sapera, jumlah bakteri, kadar asam laktat, daya tahan susu, accident sampling. ABSTRACT Research entitled “The Study of Total Bacteria, Lactic Acid Level, and Shelf Life of Sapera Goat Milk in Cilacap and Bogor” was conducted from April 9th to June 21st 2013. The materials of this research are 15 Sapera goat from each Cilacap and Bogor, the sample of 150 Sapera goat milk was collected from each goat. The method of this research is survey and the sampling method is accident sampling. Total bacteria and lactic acid level data were analysed used t test, while the data of milk shelf life was analysed used symbol test by Siegel. The result showed that Total bacteria of Sapera goat milk in Cilacap and Bogor was significantly different ( tcount > ttable ), while lactic acid level and milk shelf life was not significantly different. The conclusion of this research is total bacteria of Sapera goat milk was affected by place but lactic acid level and shelf life of Sapera goat milk was not affected by place.
