  • The objectives of this study were to determined the total phenolic content, antioxidant activity and antibacterial activity of ethanol extract of the sausage fruit as the natural active ingredients in soap transparent. The sausage fruit extract was obtained by ethanol maceration method. The total phenolic content was measured by folin ciocalteau reagent, antioxidant activity was test by using DPPH (1,1-Diphenyl-2-Picryl-hidrazyl) reagent where as antibacterial activity was performed by using paper discs method againts gram positive bacteria [Bacillus subtilis (ATCC 6051)] and gram negative bacteria [Escherichia coli (ATCC 0091IFO)]. The quality of transparent soap which is obtained in this study was compared to SNI 06-3532-1994 bath soap. The extract was concentration were used in this study are 0%; 0,5%; 1,0%; 1,5%; 2,0%; 3,0%; and 4,5%. the data were analized by Randomized Completely Block Design (RCBD), 7 treatments and 4 replications. The average total phenolic content, antioxidant activity and IC50, and Minimum Inhibitor Concentration (MIC) were determined with the test Honestly Significant Difference (HSD) with significance level 0f 5%. The results of the study showed that the total phenolic content of the extracts was 6,45±0,59 mg EAG/ g and antioxidant activity with IC50 8,56±0,84 mg/ L. Antibacterial activity of the sausage fruit extract was more effective to gram positive than gram negative bacteria. The optimal concentration of fruit extracts in transparent soap making process was 2,0%. The transparent soap obtained fulfilled SNI 06-3532-1994, except for the value of moisture content.
